Maple Oatmeal Bread

  • 2½ cups bread flour
  • 1¼ cups boiling water
  • ½ cup rolled oats
  • 1¼ teaspoon instant yeast
  • ⅓ cup + 2 tablespoons maple syrup
  • 1 teaspoon salt
  • 1½ teaspoons vegetable oil
  1. Place the oats in a bowl and pour the boiling water over them. Mix briefly and then set aside for one hour. Let cool before proceeding with the rest of the dough.
  2. In a large bowl or the bowl of a stand mixer mix all ingredients (including the cooled oatmeal) and knead until the dough has softened and is pliable. This will take about 5-7 minutes on medium speed in a mixer, or 8-10 minutes by hand.
  3. Place the dough in a lightly oiled bowl and cover loosely with plastic wrap. Let rise until doubled, about 1 hour.
  4. Butter and flour an 8x4 inch loaf pan and set aside.
  5. Turn the dough out onto a lightly floured work surface and pat out to a rectangular shape. Roll up from the short end, creating a seam at the creases as you go. Place the rolled dough in the loaf pan seam side down.
  6. Cover and let rise until the dough crests the top of the pan, about 1 hour.
  7. Towards the end of the rise preheat the oven to 350 F.
  8. Bake the loaf for 45 minutes, until the top is a dark brown. Remove from the loaf pan and let cool for at least 2 hours before slicing.
